Each week there is usually a type of sole available, grey sole, dover sole, and other sole variations of "flounder". The fillets are wonderful for stuffing and baking, or sauteed in a smiple lemon, butter, parsley and caper preparation. They cook up fast in a skillet for an easy midweek meal. Sole fillets are sold raw, uncooked, by the pound. Ordering a unit of one represents the purchase of one pound of crazy fresh, raw sole.
